Banana Chocolate Chip Cupcakes

This, by far is the best banana cupcake recipe I’ve used. I have failed so many times in baking something with banana, but this time I finally got it it. I wanted that middle ground between moist cake and loaf bread and this recipe made it happen. So I’m sharing this recipe here. 🧁 Enjoy!

Banana Chocolate Chip Cupcakes

Ingredients

1/2 cup softened butter (8-9 tbsp)

2/3 cup sugar (I always reduce the sugar a bit because I don’t want it to be too sweet. I usually remove 2-3 spoons of sugar from the actual recipe especially if the ones who are eating are the grandmas and grandpas)

2 eggs

3 bananas (the ripe ones with brown spots are the best-the 3rd one from the left)

1/2 tsp vanilla extract

1 1/2 cup flour

1 1/2 tsp salt

1 cup chocolate chip

Instructions

1.Preheat oven to 425°F (218°C).

  1. Cream sugar and butter by mixing them. Make sure they are well combined.

  2. Add the eggs, bananas, and vanilla extract. Make sure to mash the bananas, but if you want some lumps leave some bits of bananas.

  3. Add in the flour, baking powder, salt, and chocolate chips. You can also add in nuts like walnuts, almonds, or cashew.

  4. Spoon the batter into liners, filling them all the way to the top. Bake for 15-20 minutes at 177°C or do the toothpick test.

The Banana Story

Since my family moved here in the Philippines last month, we have been receiving neighborhood generosity. My neighbors would come back from their farms during the weekends and would give us boxes of bananas, guyabano, and other fruits and vegetables. When I got a box of banana, I thought of ways on what to do with it and I chose banana cupcakes even though I have failed many times before when baking it. This time, I was really satisfied with the result that’s why I shared it. Enjoy!
